At Wildfish Cannery, we really love roe, and our customers do too. So naturally, when we discovered this Sea Urchin roe from Conservas De Cambados we instantly added it to our ever-growing conservas collection.
Sea urchin roe has long been considered a delicacy, particularly in Asia where fresh roe (Uni) fetches top dollar at the best fresh fish markets, and the marvelous creature it comes from, sometimes called the "Porcupine of the Sea," is in the same family as sea stars, sand dollars, sea lilies, and sea cucumbers. The high price of sea urchin roe has little to do with scarcity—it's simply the extremely forensic, labor-intense process of processing these creatures. Well, that and the roe is simply divine...
Tasting notes: Buttery, sweet, briny flavor with a creamy rich gold consistency.
Serve it up: Best enjoyed on its own without any condiments so as not to alter its exquisite taste, smell, and texture. This product is rich, and a little goes a long way. We suggest whipping up Uni Butter by mixing a tablespoon with softened butter and spreading over a piece of toasted bread sprinkled with our Alder Smoked Sea Salt, or melt it over spring vegetables or your favorite simple pasta dish.
