This is classic Opinel: functional, timeless, and the perfect example of simplicity of form and function as a working piece of art. Part of the Slim series (a.k.a Effilés in French) this knife is elegant and highly ergonomic.
With a sharp stainless steel blade that is narrow and flexible for filleting thin slices, the Opinel N°12 Folding Fillet Knife is great whether filleting salmon or trout or for cutting fruits and vegetables. Please keep in mind that the Slim knives have a slightly flexible blade and are not designed to be use for heavy duty task.

Quality & Care:
Keep it sharp. Taking a few minutes to sharpen your Opinel will reward you with the best and safest cutting experience.
Keep the edge. Always cut on wood, bamboo, composite or food-grade plastic surfaces: avoid the hard glass, marble, and ceramic that will quickly dull your blade.
Opinel wood handles benefit from being kept as clean and dry as possible, as exposure to soaking or prolonged wet environments may cause the wood to split or warp.
Wash in warm running water with mild dishwashing soap. Towel dry or air dry.
After cleaning, Opinel folding knives should be dried in the open position until they're fully free of moisture.
