Serve it up: For an instant appetizer, all you need is a baguette, some fancy butter, and flaky salt. To create a classic Portuguese conserva presentation, gently toss the sardines in a bowl with a legume of some kind, fresh tomatoes or peppers, and olives. Top with an acid, parsley, a hard-boiled egg, and—most importantly—the remaining sacred sardine oil, which can also be a beautiful addition to a vinaigrette. If cooking with sardines, remember canned fish is already cooked, so heat only long enough to cook the other ingredients and blend the various flavors. Serve sardines warm with peeled, diced, and quickly boiled potatoes shaken with a handful of minced herbs and some good butter. Accompany with a delicious bottle of Portuguese wine and great friends.
