If you love our Smoked Herring, try these sardines from one of Spain's most legendary craft-makers of fine conservas, Jose Gourmet. Jose Gourmet combs the coasts of Portugal and Spain to find seafood of distinction and can it at peak freshness to create conservas that are revered by tinned seafood lovers around the world. Like Wildfish Cannery, they believe in the principles of fair trade and preserving the culinary cultures of their region.
Tasting notes: Rich, bold, authentic flavor. Luxurious taste.
Serve it up: For an instant appetizer, all you need is a baguette, some fancy butter, and flaky salt. To create a classic Portuguese conserva presentation, gently toss the sardines in a bowl with a legume of some kind, fresh tomatoes or peppers, and olives. Top with an acid, parsley, a hard-boiled egg, and—most importantly—the remaining sacred sardine oil, which can also be a beautiful addition to a vinaigrette. If cooking with sardines, remember canned fish is already cooked, so heat only long enough to cook the other ingredients and blend the various flavors. Serve sardines warm with peeled, diced, and quickly boiled potatoes shaken with a handful of minced herbs and some good butter. Accompany with a delicious bottle of Portuguese wine and great friends.
