If you're planning a conservas board, Ramón Peña tinned mussels from Galicia are essential. Tinned mussels are soft, velvety, and these particular mussels are harvested after they've matured longer on the rocks, making them plump and firm enough to hold up perfectly during the preservation process.
Since the 1920s, Ramón Peña has been among the premier producers of fine conservas in the Galicia region of Spain. Mussels grow just about anywhere, and many seafood-loving conservationists proclaim mussels as "guilt-free" seafood due to their ability to filter and purify the ocean.
