Tips, throats, cocochas, tongues, jowls, or cheeks. Whatever you want to call them, they are the best part of the fish.
It took about four days for our small crew to painstakingly remove these from 2,000lbs of heads. Then we cured them, cold smoked them, and canned them. In the end, we ended up with about 200 cans to share with you.

Rico Lanáat’ Worl is a Tlingit/Athabascan social designer and artist with training in anthropology.
His work started in developing the arts department at Sealaska Heritage Institute, implementing programs to empower the indigenous artists of Southeast Alaska. The programs focused on developing fundamental skills and access to resources.
Through his ongoing project, Trickster Company, He carries forward the goals of empowering indigenous artists, Celebrating indigenous resilience, promoting cross cultural connection, representing modern indigenous people to Alaska's visitors, and breaking into a tourism market that profits from Alaska Native art styles with little to no return to the communities that spent thousands of years developing those styles.
Currently Rico is working towards developing his skills in digital 3d sculpture and exploring themes of indigenous futurism.
