White king belly—sweet, fatty, alder-smoked. We canned it because we could. Call it delicacy if you want—we just call it dinner.

Our white king salmon is hook-and-line harvested in the pristine waters of Southeast Alaska, then hand-cut and canned fresh in Klawock—our tiny town at the edge of the Pacific. Here's the catch, we never know it's white until we fillet it.

Then we do something extra:

We choose the rarest cut of all—the belly of the rarest salmon. Silken, marbled, and decadent, it’s Alaska’s most coveted bite, tucked into a can for those who know. Each tin is slow-pressure cooked in small batches to capture the delicate, buttery richness that makes king salmon legendary.

  • Any king salmon is a prize, but at only 5% of the population, a white king is a jackpot. The meat’s nutritional value, moisture, and fat content are no different than that of any other king. Yet, something about that rare ivory meat is spellbinding. Just the belly? Bold move, dude.
