What's in the box

After a long winter, the herring spawn is what signals that spring has finally arrived on Prince of Wales Island; but for our northerly neighbors on the Kenai Peninsula, the flow of birch sap is nature's alarm. 

When the idea came to us to find a pairing for our beloved Smoked Coho, we knew not just any old flavor would be able to tango with the sea-and-smoke profile inside this iconic can. So we turned to none other than Homer's own Bridge Creek Birch Syrup for a late-run batch of this year's harvest. And don’t be turned off by the word “syrup” — if maple were a can of coca cola, birch would be a glass of malbec.

Our coho is hook-and-line caught in the cold, swift waters of Southeast Alaska, then hand-filleted and smoked in Klawock—our tiny town at the edge of the Pacific. We fillet it, we brine it, we smoke it, we can it.

Then we do something extra:

Prior to sealing each tin of smoked coho, we finish it with a drizzle of sweet birch syrup from Talkeetna, tapped each spring as the Interior wakes from winter. The smoke meets the syrup in a true taste-of-Alaska pairing—savory, woodsy, and sweet, with a whisper of the birch forest in every bite.

Custom Coho you won't find anywhere else.

Coho with Birch Syrup is the BEST. You won't find this from BumbleBee. The new boxes are very stylish but the cans are smaller than before. Calll me a traditionalist, but I prefer more salmon than artistic boxes.
